I'm Not Dead Yet!

And this isn't a Monty Python reference...


First of all, I'm really pleased with myself for weaving in one of my favorite Monty Python moments into the title of this blog post...


Secondly, I'm pretty dang pleased with myself for having made it through the first day of my 30-day detox/cleanse/diet without murdering anyone or even rudely snapping at my husband. I'm almost done with "Day 2" and I can honestly say it's going well. Yeah, yeah, I know I'm only on the second day, but considering I was convinced I was going to die, I think I'm doing quite well.


Now here's the crazy part... I've made several healthy meals AND THEY WERE AMAZING. I'm not saying "amazing" like, "amazing for health food," but I honestly mean a level of amazing that stands on its own.


Because you're nice enough to visit my little corner of the interwebs here, I'll share the ranch dip recipe that I'm really digging. I put it on the turkey burgers I made last night and HOLY SMOKES was that good. And I use it for dipping raw veggies, too - I may never go back to Marzetti's. So if you're feeling adventurous, give it a try... It's supes easy. :-)


Ingredients

  1. 2 Tbsp Parsley (dried)

  2. 2 tsp Garlic Powder

  3. 2 tsp Onion Powder

  4. 1 1/2 tsp Dill

  5. 1 tsp Salt

  6. 1/2 tsp Pepper

  7. 1 13-oz can Coconut Milk (FULL FAT with Guar Gum) - Refrigerate overnight prior to using

  8. 2 1/4 tsp Lemon Juice

  9. 1/4 tsp Salt

Directions

  • Combine ingredients 1-6 and set aside

  • Remove can of coconut milk from fridge. Flip it upside down and use can opener to open bottom of can. Watery liquid will have separated from the solid coconut cream overnight; pour off the liquid and discard. Spoon out cream into a bowl.

  • Add lemon juice and salt and mix through

  • Add 1 1/2 Tbsp of the dry ingredients to cream and stir (save the rest for another batch!)
